This extraordinary coffee is the result of impeccable care and meticulous selection of beans, coming from the exclusive Island of Timor. Timor Eratoi - Nano Lot #1 beans are grown at high altitudes between 1,800 and 1,850 meters above sea level, ensuring an optimal environment for the development of a unique flavour profile.

TIMOR EST

This exceptional dwarf lot, the first in the production, comes from the tropical island of East Timor, a lush island in the heart of South-East Asia. 
It grows at an altitude of 1,800 metres above sea level in the shade of the foliage of the imposing Ai-Samtuku (Albizia) shade trees. 
Each bean has been cared for with the utmost attention by the Eratoi community, a group of only 25 growers led by Simao Pedro De Deus, using totally natural and sustainable cultivation methods.


The high altitude and optimal climatic conditions favour slow and gradual growth, allowing the beans to develop optimal sweetness and unique flavour complexity. After slow and natural ripening, the cherries are selected only when fully ripe, fermented aerobically for about 40-42 hours and then dried in the sun on raised beds for 15-20 days until the ideal moisture level is reached.


The result is an extraordinary coffee, the #1 wild and organically grown dwarf batch. A spectacular coffee, sweet and full-bodied, assertive and balanced, with spicy notes of cinnamon and cardamom, delicate floral hints that fade into a pleasant malic acidity. A complexity to be savoured.
