This batch is dried using the Black Honey method: the best cherries are stripped and sun-dried with the mucilage intact on raised beds, spreading them very carefully in layers as thin as possible and raking them frequently for a perfectly even result. It is a long and painstaking process: it takes at least 23 to 27 days for the cherries to dry.

 

The result repays so much waiting: an intense sweet body with good acidity, an intense dark chocolate background with accents of sweet fresh fruit in pol-pa, chocolate cookies, and caramelized nuts.

El Guamo

Fernando Alfaro and José Gutiérrez's Finca El Guamo, which borders the El Imposible National Natural Park, covers 45 hectares between two mountain ranges that protect it from strong winds, a true biological corridor that with its microclimate is ideal for the production of specialty coffees.

 

Fernando and Jose have been coffee producers for four generations, and the philosophy of their family-run Finca El Guamo fully embodies the three pillars of coffee excellence: quality in the cup, sustainability, and the well-being of the workers-The Finca, which employs as many as 30 permanent workers and in the high season employs up to 110 workers, contributes significantly to the well-being and improved conditions of the locals.
