Honduras San Marcos
This coffee so special as to become famous comes from the same region as the ancient Mayan ruins, from the city of San Marcos in the department of Ocotopeque, near the border with El Salvador. In this mountainous area with a soil rich in nutrients and the ideal atmospheric conditions to grow it, this coffee is processed in the traditional wet mill of Molinos de Honduras, on the farm of San Pedro Sula. The oldest active exporter, it takes advantage of the abundant rains in the country and is then left to dry naturally in the sun until it reaches its optimal humidity level. This single-origin is among the best: it is classified as Strictly Hard Bean (SHB), a label reserved for coffee grown at altitudes above 1,200 metres, and this enhances its quality: at higher altitudes, the slower bean growth allows for more nutrients; therefore, these coffee beans are richer in flavour and healthy organic compounds, due to the higher amount of nutrients they contain.
