What makes Bajawa coffee unique is its connection to traditions and the harmonious, symbiotic relationship between man and nature: most of the crops are located in forest areas where coffee grows almost wild, without specific interventions or treatments. Over time, this has encouraged spontaneous hybridization between varieties, such as this one.
The farmers' plots, even those smaller than one hectare, known as “tanah adat” or “ancestral lands,” are often fragmented and managed communally, sometimes within protected state-owned forests where the government allows them to plant coffee to preserve the environment and prevent fires, provided that the tall trees remain intact.
This particular variety of Arabica, Selection 795, a natural cross between Indian Arabica and Liberica, has a very fine and sweet cup, one of the best in Indonesia, which does not produce large volumes, and the meticulous Fully Washed method typical of the area enhances it.
The beans from ripe cherries, harvested by hand and pulped within a few hours, are fermented in water tanks for 12-36 hours, depending on the microclimate, then completely pulped and dried on patios until the ideal moisture content is reached.
It is a specialty coffee with a refined profile, silky texture, and impeccable balance, with a sweetness that envelops you from the first sip.
Notes of sweet fruit, with a clear hint of lychee that gives freshness and a slight acidity, give way to delicate nuances of white flowers and jasmine and close with a lingering aftertaste of chocolate and plum that completes it.
