Guatemala El Pastoral

This coffee comes from the El Pastoral farm, on the Antioquia plateau, one of the best growing areas in the world thanks to its very special microclimate and natural volcanic fertilisers, from the care of Juan de Dios Castillo and his 4 brothers, who cultivated this very special limited edition in honour of the anniversary of the founding of the Fedecocagua cooperative of small-scale producers to which they belong. The soil rich in minerals, the mild temperature and the slow maturing of each cherry mean that each bean has a unique vibrancy in the cup. During harvesting, the coffee cherries go through a triple selection process by hand: they are carefully picked, sorted and then depulped, fermented, washed and pre-dried on the farm. The partially dried coffee is brought to complete the process in a nearby place where it remains in the sun on raised boards for about 14 days with the guarantee of complete quality control and traceability
