Classified HG, it is grown at high altitudes on less than 10 acres without pesticides and produces a denser, more vibrant flavour profile than those grown at lower altitudes; the higher altitudes provide a favourable environment for the coffee. The cool climate, with less direct sun and a lot of humidity, means that the cherries ripen slowly, giving each individual bean more time to develop depth and sweetness and incorporate more flavour. In the cup it is very balanced and sweet, with a medium body and acidity, notes of cocoa, hazelnut and hints of citrus. Messicoa Chiapas

This coffee takes its name from the region in which it was grown, the southernmost state of Chiapas, where tropical conditions, higher altitudes and volcanic soils create ideal growth conditions. It comes from several small family farms with less than 10 acres of land at their disposal, growing it organically and without pesticides, at altitude. It is sorted by hand according to the very laborious standard of the European EP Process, which involves continuous selection until no more than 8 defects are found in a 300 gram sample. This certifies and improves the quality and consistency of the cup.
