Washed and harvested by hand, it is left to ferment with anaerobic fermentation for about 36 hours. The result is a sweet coffee, a very clean and complex cup. The good body, very balanced, is specialised by notes of cinnamon and sweet tobacco, fruity grapes and mandarin, for a really excellent aftertaste. Indonesia Ijen Volcan Plateau
speciality comes from the PTPN XII, PT coffee plantations. Perkebunan Nusantara XII, for years renowned for the production of excellent coffee; It was cultivated in the Plateau of the Jien volcano, in the region of Banyuwangi, in East Java, on a volcanic soil rich in nitrogen and phosphates and climate with strong thermal excursions between day and night, perfect for the maturing of speciality coffees. Here the State Owned Enterprise PTPNXII produces the Java Perkebunan Nusantara following the strict requirements of the Good Agriculture Practice and the Good Manufacturing Practice and obtains this Excellent Arabica Gourmet quality. The Java Ijen Volcan Plateau LOT2 is entirely harvested by hand, washed and fermented anaerobically for about 36 hours in tanks with one-way valve, then dried in the sun for 14 to 21 days and finally further selected by hand. The result is a sweet coffee, a very clean and complex cup with a good body, balanced and with a really excellent aftertaste.
